In the Kitchen: Vanilla Bean Oatmeal Cookies

These aren't your typical oatmeal cookies. They would be if it wasn't for the melt-in-your-mouth white chocolate chunks, the juicy cranberry pieces and the speckles of vanilla bean laced throughout these little indulgences. No, they aren't your average oatmeal cookie at all. They're texture is flawless with crispiness around the outside and softness, without being underdone, in the center. Definitely a Valentine's Day hit.
So, now you're wondering how to make these gems, huh? Alright, I'll share. I adapted the recipe from Two Peas & Their Pod using a whole vanilla bean instead of vanilla extract. I also soaked dried, whole cranberries in warm water for 30 - 60 minutes before chopping them up. As for my white chocolate, I used high-quality white chocolate chunks, which I chopped up inconsistently. Lastly, I refrigerated the dough for 24 hours, transferring the balls of dough directly to the oven from the fridge.
