In the Kitchen: Favorite Breakfast Quinoa

I first tried breakfast quinoa about a year a ago after growing sick of oatmeal. It instantly became a favorite, and I began spicing up (literally) the recipe. Similar to oatmeal, you can add a variety of ingredients into this breakfast quinoa. I like blueberries, maple syrup and pecans, but I'm still trying different fruit, sweetener and nut combinations. What's your recipe?

Makes 2 servings (for me)
1/2 c of water
1/2 c of almond milk (I use unsweetened vanilla)
1/2 c of quinoa
add ins and sweetener of choice

Put water, almond milk and quinoa (and cinnamon or other spices) in a pot and bring to a simmer. Simmer approximately 12 minutes or until almost all of the liquid is soaked up. Make sure the quinoa is soft, too.

Add in your sweetener of choice. I pour in a little maple syrup. You can top it off with a splash of almond milk, blueberries, raspberries, bananas, pecans, almonds, apples, coconut, the list is almost endless.

*Tip: I make this at the beginning of my week and then heat it up each morning and top it off with a splash of almond milk, blueberries and pecans.
