In the Kitchen: Peanut Butter Cookies

The other day I found myself with too many baking products and a good chunk of free time. So it only seemed right that I made some cookies.

I threw these babies together so bare with me on the recipe. These are all estimates of the ingredients.

3/4 peanut butter
1/2 cup brown sugar
1/2 cup of sugar
1 stick of butter
1 t. vanilla extract
1 egg
1 1/2 cups of flour 
a pinch of salt
1 t. baking soda

Mix the peanut butter, sugars and butter until smooth. Add the egg and vanilla and stir until mixed. Combined the dry ingredients and add the wet ingredients to the dry. Mix until well combined and refrigerate for an hour.

Preheat over to 350 degrees. If you would like, make balls of the dough and roll in topping of choice. I used chia seeds and coconut. Place on a cookie sheet and bake until golden brown, about 15 minutes.
