Dark Chocolate Cherry Cookies
I usually find the basics of my recipes on other blogs, but when I couldn't find the right recipe I decided to adjust this one from Imperial Sugar. Since I didn't have grapeseed oil, I used olive oil. I also increased the almond extract, and added a touch of vanilla extract. Lastly, I chopped up dark chocolate to add instead of chocolate chips. Whenever I can (which is almost always), I opt to chop my own chocolate. It produces inconsistent chunks and pieces of chocolate, and I think it creates a better cookie.
The sugar at my house is a 1 to 3 mix of coconut sugar and refined sugar, which resulted in pretty, dark speckles all over my cookies.
