3 Upgraded Super Bowl Appetizers


Alex has a hard time coming to terms with the fact that I don't like wings. They're a very basic tasting appetizer; one I would never order. When it comes to food, I try to stay clear of "basic." I always look for quirky restaurants with equally quirky menu options when I'm choosing where to eat. To help steer your Super  Bowl appetizers away from basic, I took the liberty of upgrading 3 of them: sliders, ham & cheese sandwiches and jalapeno poppers. And guess what? It was simple.

Chicken & Waffle Sliders - These can be as easy or difficult as you choose. I bought my waffles and made my chicken, but you could just as easily buy your chicken too. I used this recipe for the balsamic onions. Make your chicken and waffles then assemble, garnishing as you please!

Pesto, Ham & Cheese Pinwheels - Super easy. Heat oven according to your puff pastry package. I thawed one sheet of puff pastry and rolled it out a little, make sure to flour your surface to prevent sticking. Then spread one side of the puff pastry with pesto, followed by laying down cheese and jam (I used deli cuts and probably 6 slices of each). Tightly roll up your puff pastry and fillings starting with the long end. Slice into 1/2 inch pieces and pop on a cookie sheet. Bake until golden!

Cheesy Jalapeno Bites - I upgraded these by dipping them in high quality raspberry jam. Delicious! I also used mozzarella instead of parmesan. For a spicier bite, use more jalapeno; these were pretty mild.
