Cocktail of the Month: Vanilla Black Velvet

I've always found it strange how some people don't like beer.
Have they not been exposed to enough good beer? Did they have a bad experience? Have they even tried it? Well, if you're one of them this cocktail of the month isn't for you. Try this one or this one instead. But if you're like my friend Julia and me, beer is right up your alley.

Since St. Patrick's day happens in a matter of weeks, I thought it suiting to try a Guinness cocktail. The average Black Velvet cocktail is a 1 to 1 ratio of Guinness and champagne. My friend Julia and I decided to make it our own with a splash of vanilla extract. For a sweeter variation use a little vanilla simple syrup.

What you need:
- 1 part Guinness Extra Stout
- 1 part champagne
- splash of vanilla
- glasses

What you do:
Pour your Guinness into your glass, since it's a champagne cocktail we used champagne glasses. Add a splash of vanilla, we found 1/8 - 1/4 teaspoon to be about right. Top with champagne of choice and enjoy.
